Australia on a Plate's semicircle shaped French cheese that has a natural light orange peel, on which the more dominant white mould battles it out with the grayish moulds general to blue cheeses.
Similar to a smaller version of Bleu de'Auvergne, a soft, white mould on some or all of the rind is developed. The steadiness inclines towards that of Brie. The blue is stout in place of the stripes and the flavour is spicy, fresh and creamy, with a little salty tang. The pate has the small taste of blue mould and the smell of the caller.
